1 large sweet potato, sliced lengthwise into 1/2 inch thick slices

Bring a large pot of water to boil. Once boiling, add sweet potato slices and a generous dash of salt. Turn burner down to low and simmer for 5-8 minutes, until sweet potato slices are soft, but still firm. Place sweet potatoes in a bowl of ice water to stop cooking. You can stop here and place slices in a glass storage container and refrigerate for later use. To reheat, place on a grill pan or skillet to crisp, 2-3 minutes on each side. Mash the avocado in a small bowl and add a squeeze of lemon juice, salt, and pepper, Top sweet potato slices with mashed avocado and add a runny egg for extra protein.
