Honey Roasted Pumpkin Seeds

Don’t let those pumpkin seeds go to waste! Here’s an easy recipe to enjoy these little nutritious seeds!

Ingredients:

2 cups pumpkin seeds, rinsed and dried

2 tablespoons avocado oil

1 teaspoon cinnamon

1 teaspoon salt

3 tablespoons warm raw honey

Directions:

Preheat oven to 325 degrees.

Line a baking sheet with parchment paper.

In a mixing bowl, combine seeds, avocado oil, and cinnamon.  Mix thoroughly.  Drizzle warm honey (warm honey will help it spread evenly over the seeds) over the pumpkin seeds and mix thoroughly again making sure honey is spread over all of the pumpkin seeds.  Place seeds in a single layer on the pan.  Roast in the oven for 20-30 minutes.  Stir halfway through to be sure they do not burn.  Remove from oven and sprinkle with salt.  Serve.
