Pumpkin Pie Chia Pudding


Pumpkin pie and everything nice! This is a delicious and nutritious way to start your day.  You can make this pudding ahead the night before by increasing the amount of liquid you add by 1/4 cup. Enjoy! Recipe makes 1 serving


3 TBS chia seeds

1/4 cup almond milk

1 1/2 TBS pumpkin puree

1/2 TBS maple syrup (more to taste)

1/4 tsp vanilla extract

1/4 tsp ground cinnamon

1/8 tsp ground ginger

1/8 tsp ground nutmeg

Optional Toppings:

granola, shredded coconut, nuts, seeds, nut butter


Wisk together ingredients in a small bowl until well incorporated. Add more liquid, 1 TBS at a time, and wisk until it comes to a pudding consistency. Top with your favorite granola and shredded coconut. For extra protein, add nuts/seeds or your favorite nut butter.
