Citrus Salad with Spiced Pecans


This salad is light yet bold. Perfect as a side to add some leafy greens to your meal or add some chicken (or maybe leftover Thanksgiving turkey) for a light and satisfying meal. The spiced pecans make the salad! If fact, you could just make these pecans and let us know how long they last in your home!!

Citrus salad:


3 cups romaine lettuce

1 cup arugula

1 cup orange segments

1/4 cup finely diced red onion

1/2 cup orange spiced pecans


1/4 cup white wine vinegar

1/2 cup olive oil

1 TBS honey

1 tsp dijon mustard

1/2 tsp sea salt

salt and pepper to taste


Combine salad ingredients in a bowl. Drizzle 2-3 TBS of dressing, gently toss to coat. Add salt and pepper to taste.

Orange Spiced Pecans:


2 TBS coconut palm sugar

1 tsp ground cinnamon

1/2 tsp sea salt

1/2 tsp ground coriander

1/2 tsp ground ginger

1/4 tsp black pepper

1/8 tsp allspice

1/8 tsp turmeric

2 TBS melted coconut oil

2 TBS maple syrup

2 cups raw pecans

1 orange


Preheat oven to 375 degrees.

Mix the sugar, cinnamon, sea salt, coriander, ginger, black pepper, allspice, turmeric in a small bowl and set aside.

Place pecans on a rimmed baking sheet and bake in oven for 7 minutes.

While pecans are roasting, melt the coconut oil in a small saucepan over medium heat. Once melted, add maple syrup and whisk together.

Add oil/syrup mixture to the pecans and generously coat. Add the spice mixture and toss to coat. Return the pecans to the oven and bake for 15 minutes, stirring halfway to evenly cook.

Meanwhile, peel the orange with a vegetable peeler or paring knife. When nuts are finished roasting, remove from the oven and add the orange peel. Toss to coat while warm to infuse the orange flavor. Allow to cool and remove the orange peel. Nuts can be stored in an airtight container for 2 weeks. Add to salads or enjoy as a snack.
